The data given in reference literature about the specific wastewater amounts and pollut-
ant loads from the area of meat production can mostly only be used as orientation help,
due to the considerable variation range. They are the more usable, the more exact struc-
ture and production conditions of the examined companies have been documented and
communicated.
As becomes apparent from a comparative analysis of different reference literature data
on the specific wastewater production, for the slaughter of cattle as a rule between 500
and 1.000 l per animal must be assumed. In exceptional cases, however, there can result
considerably higher values (up to 4.000 l). Furthermore, it becomes evident that for
slaughtering including bowel processing the specific wastewater amounts are higher than
in slaughterhouses where no bowel processing is done. For pig slaughtering, the specific
wastewater amounts vary from 100 to 300 l/animal, with extreme variations towards the
upper end (up to 600 l). Here as well the specific wastewater amount is increased if the
slaughtering includes bowel processing.
In the following table, the specific wastewater amounts and pollutant loads are given
which can be assumed for single production areas of the meat production for cases where
