2 PROCESSES AND TECHNIQUES APPLIED IN SLAUGHTER-
2.1 Slaughter
HOUSES
The following descriptions of production methods shall serve to give a survey that is tar-
geted mainly at creating an understanding for the emerging waste and wastewater prob-
lems.
The slaughterhouses and meat processing companies can be divided into the following
4 groups according to their respective production processes. The many local butcheries,
however, are not considered here.
• Industrial slaughterhouses
• Poultry slaughterhouses
• Meat carving companies
• Meat processing industry
For this classification, one has to consider that the production methods in the single pro-
duction areas are mainly the same. Generally, we find the following production processes:
• Slaughtering
• Preparing of the meat (meat cutting, getting poultry ready for frying, etc.)
• Processing of the meat (sausage production, etc.)
2.1.1 Slaughter of large animals
