1 GENERAL INFORMATION ON SLAUGHTERHOUSES AND IN-
STALLATIONS FOR THE DISPOSAL OR RECYCLING OF
ANIMAL CARCASSES AND ANIMAL WASTE
When an animal is slaughtered, one gains precious foodstuff for human consumption,
but on the other hand residual matter is produced which must be disposed of. The distinc-
tion between substances is done on the basis of legal directives, social acceptance, and
economic considerations. The different utilisation options are shown in the following Fig-
ure.
There emerge two paths:
• Slaughter/food production, and
• Recycling/processing and utilisation of residues
The subdivision into the two paths is shown in graphics 1-2 - 1-3, which present the dif-
ferent slaughtering yields for cattle, pigs, and poultry, respectively. Accordingly, only the
processes for the processing are presented here, that is of the slaughtering as such and
the processing of the residues for further utilisation. The ensuing processes, as far as they
are new production processes, are not considered. In Figure 1-1, these processes are
outlined with a double edge.
