Preparation:<br />

1. Tenderize turkey fillets finely, add salt and pepper.<br />

2. Chop basil, mash cheese with fork and place together with basil onto ham slices, carefully wrap the<br />

ham slices and place on turkey fillets; also wrap and clamp with toothpick.<br />

3. Mix lemon juice with oil and spread on fillets.<br />

4. Grill for 10-12 minutes and always spread the remaining lemon mix when flipping.<br />

GRILLED beef<br />

Raclette from goat cheese<br />

recipe for 4 persons<br />

4 thin pieces of veal<br />

4 slices of prosciutto<br />

4 sage leaves<br />

4 round goat cheeses<br />

1 spoon of fine olive oil1 spoons of olive oil<br />

salt and ground black pepper<br />

Preparation:<br />

1. Cut cheese lengthwise into three circles, each with the same thickness. Add salt, pepper and drizzle<br />

olive oil. Put into raclette pans.<br />

2. Roast veal fillets on the top plate, place ham and sage leaves in between.<br />

3. Insert the pans beneath the grill. The cheese shall not melt; it should be lightly roasted and flipped<br />

with a flat spatula. This Italian recipe can be served with mozzarella or Gorgonzola.<br />

Raclette feast<br />

recipe for 8 persons<br />

250 g of beef fillets cut into 8 slices<br />

250 g of Swiss raclette cheese cut into slices<br />

1 large celery stalk, cut into thin, diagonal slices<br />

small celery leaves for decoration<br />

Marinade preparation:<br />

2 spoons of sunflower oil, or similar<br />

2 spoons of red wine<br />

1 spoon of mustard<br />

1 spoon of Guinea pepper<br />

Preparation:<br />

1. Mix all ingredients for marinade, cover the beef with marinade and leave in refrigerator for 30<br />

minutes.<br />

2. Add salt to the meat slices and place into the raclette pan.<br />

3. Grill quickly, remove and place celery slices and then slices of cheese onto the top. Decorate with<br />

small celery leaves.<br />
