Raclette<br />
Raclette, in terms of international cooking, is both the cheese as well as the entire dish prepared and<br />
the device used to prepare it. Each of these devices are equipped with an area, where you can either<br />
grill or maintain the food, such as meat, fish, vegetables, potatoes and fruits warm. The top removable<br />
plate, made of marble, cast iron or aluminium is given an anti-adhesive layer. The bottom level, heated<br />
by a heating unit, contains pans with an anti-stick layer. These are used for thawing food. Ingredients<br />
shall be prepared in advance on a serving plate. The raclette device can be round or square, usually with<br />
six to eight pans, on which guests place their cheese, fish, spices according to the recipe and their own<br />
taste. Upon warming up, the preparation stage takes from 15 to 30 minutes – according to the type<br />
of food. True experts drink non-sweetened black tea or bitter liquor along with raclettes. Here, we will<br />
most likely stay with the shepherd-wine tradition: dry wine.<br />
Stone plate<br />
Hot natural whinstone, perhaps another polished lava stone, marble - you can apply a bit of grease, or<br />
not, add spices, carved up pieces of meat, fish, vegetables and fruit. Thanks to the natural preparation<br />
of food, the composition does not change, the taste remains natural and the aroma develops within a<br />
short time of grilling. The reward is the preservation of minerals and vitamins.<br />
USING THE APPLIANCE<br />
Place the grill on a firm, flat surface to ensure stability and enough space around the grill. Put the grill<br />
and stone plate on the heating unit. Use only stones supplied together with the device or purchased at<br />
an authorized service centre and only on a specified base.<br />
Do not put aluminium foil or anything else under the stone or between the heating unit and reflecting<br />
glass.<br />
Before using the grill for the first time, wipe the plate and grilling pans with a damp cloth and spread a<br />
small amount of edible oil on the grilling plate using a small cloth.<br />
The red light will go on immediately after the device is plugged into the socket. It will turn off once it is<br />
disconnected. The right red indicator lamp will light when the temperature control is turned from “1‐8”<br />
and will again turn off upon reaching the selected temperature. This lamp will go on or off during the<br />
grilling process, depending on the achieved grill temperature. The thermostat settings only have an<br />
informative nature (see table below) and we recommend trying to prepare food so that its taste and<br />
quality would correspond with your requirements. Before using the device, always pre-heat the grill on<br />
the highest level for 10-15 minutes and the stone plate for a maximum of 20-30 minutes.<br />
After using the device for the first ten times, pour a small amount of vegetable oil on the stone and<br />
wipe with an absorbent cloth. This will limit food becoming stuck to the stone.<br />
Note: The first use of the appliance can be accompanied by a slight odour or smoke. The odour can<br />
be caused by greases that became stuck to the heating unit during production and are now<br />
brining. Therefore, we recommend warming up the grill for 10 minutes without placing any<br />
food onto it (make sure to provide sufficient ventilation during this interval).<br />
