SPIESSBRATEN RECIPE<br />
Zutaten<br />
Rindfleisch: Roastbeef, Lende, Hohe<br />
Rippe, nur gut abgehangenes Fleisch<br />
verwenden Schweinefleisch: Lende,<br />
ausgebeinte Kotelettstucke, Vorderschinken,<br />
Kammstucke.<br />
Bei allen Fleischsorten ist zu beachten:<br />
3-5 cm Fleischdicke, handgroß,<br />
300-400 gr. Rohgewicht pro Person<br />
Gewurze: Zwiebeln, Salz, Pfeffer,<br />
Knoblauch<br />
Ingre<strong>die</strong>nts<br />
Beef: Roastbeef, loin, best end ribs,<br />
use only tender meat<br />
Pork: loin, pork chops, ham, pork<br />
chops from neck. Please note: The<br />
meat should be 3 to 5 cm thick, raw<br />
weight per person approximately<br />
300 to 400 grams. Seasoning: Onions,<br />
salt, pepper and garlic<br />
6-10 Stunden vor Zubereitung Fleisch<br />
<strong>mit</strong> Pfeffer und Salz bestreuen, Zwiebeln<br />
schälen, in Scheiben schneiden,<br />
<strong>mit</strong> Salz und Pfeffer wurzen und <strong>mit</strong><br />
den Händen etwas drucken. Fleisch<br />
da<strong>mit</strong> einreiben, anschließend in den<br />
Zwiebeln lagenartig einlegen, <strong>mit</strong><br />
Zwiebeln enden. Vor dem Auflegen auf<br />
das Feuer das Fleisch <strong>mit</strong> Zwiebeln und<br />
Knoblauch spicken. Feuer aus Buchenoder<br />
Eichenholz vorbereiten, Fleisch -<br />
stucke auf den heißen Rost legen und<br />
auf hoher Flamme kurz beidseitig anbraten.<br />
Dann auf kurzer Flamme <strong>mit</strong><br />
viel Glut garen, je nach Dicke des Fleisches<br />
20 bis 30 Minuten. Der Spießbraten<br />
ist gut, wenn Saft aus dem Fleisch<br />
austritt oder das Fleisch beim darauf<br />
drucken kaum mehr nachgibt.<br />
Approximately 6 to 10 hours prior to<br />
final cooking, sprinkle salt and pepper<br />
on the meat slices. Peal onions and cut<br />
them in slices. Season onions with salt<br />
and pepper. Then cover the meat with<br />
the seasoned onion slices. Heat an open<br />
fireplace using beech- or oakwood. Before<br />
putting the meat on the grill, fill it<br />
with little onion and garlic pieces. Put<br />
the meat on the grill and roast them<br />
shortly on both sides using a high flame<br />
to seal the pores of the meat. Then<br />
roast the meat on low flame with lots<br />
of glowing fire. Cooking time is approximately<br />
20 to 30 minutes depending<br />
on the weight of the meat. The “Spiessbraten”<br />
is usually ready when the meat<br />
juice is noticeable on top of the meat.
