Forskningen i afdelingen tager udgangspunkt<br />

i råvarekvaliteten af de animalske<br />

produkter. Det sker med henblik på at<br />

optimere deres teknol<strong>og</strong>iske kvalitet, deres<br />

funktionalitet, lugt, smag, tekstur <strong>og</strong><br />

sammensætning samt deres ernæringsmæssige,<br />

sundhedsmæssige <strong>og</strong> etiske<br />

kvalitet. Forskning i hår <strong>og</strong> skind fra pelsdyr<br />

indgår <strong>og</strong>så i afdelingens arbejde.<br />
