Our white bread is made of organic Danish Ølands<br />
Spring Wheat .<br />
Ølands Spring Wheat is an old Nordic cereal with an<br />
unusually high content of protein and gluten.<br />
All our doughs contain wholegrain flour, grinded<br />
every morning in the bakery.<br />
The cereal has been grown by Per Grupe on Mørdrupgaard<br />
and milled by Ulf Carlsson Gissleberga Kvarn.<br />
Our bread is cold-risen for 24 hours with biga, handled<br />
and shaped by hand and baked in a hot stone oven,<br />
here in the bakery.<br />
