A special variation
The last in this little series of
herbs found in Greenland’s
fjord vegetation is the contents
of the ptarmigan crop.
According to where the ptarmigan
has lived, its crop can
contain a splendid mixture
of buds and shoots from different
plants and different
kinds of berries.

It is also advisable to make
a strong-flavoured essence
by using a large quantity of
herbs in a modest amount
of Brøndum aquavit in a
tightly closed jar. When you

lunch you can dilute it with
aquavit.
